if your meals have been feeling dull lately, this taco recipe will bring a little sparkle back in your life – and it’s proof that eating healthy doesn’t have to be boring plus it’s easy to make– prebatch the sauce & the flash pickled onions, and then roast the cauliflower & assemble the tacos for the sauce: -1 cup cashews -1 cup water -juice of 1 lime -3 tbsp chickpea or white miso -2 cups cilantro -1 clove garlic -1 tbsp onion powder -optional: 1-2 tbsp pickled jalapeno instructions: just soak the cashews, drain & rinse them, then blend everything together till super smooth for the onions: use a mandolin, or VERY finely hand slice red onions; cover them in ACV for a few hours or ideally overnight. i prefer this method of “pickling” vs real pickling, which involves heat & often sugar, bc 1. there’s no sugar, 2. the onions stay raw, so you get the benefits of their powerful prebiotic fiber, which feed the beneficial bacteria in your gut & strengthen your gut health for the cauliflower: -preheat oven to 425F (I like to do convection roast, I find it cooks quicker & more crispy) -break cauliflower into florets, toss with @tajin chili lime salt & avocado oil -roast cauliflower until slightly charred...roughly 25 minutes for me. i like to then turn the oven off but let the cauli sit inside the oven so the insides get molten & the outsides stay crispy– you don’t have to do that though if you prefer your cauli to have more structure/not be soft! to assemble: -toast your tortillas, top with sauce, add cauliflower -I added watermelon & purple daikon radishes, jalapeno, avocado, pinto beans, pickled red onions, cilantro,  and a bit more lime do you add extra lime to your tacos too?!? or just me? also, follow for more healthy/pretty/yummy recipes! #vegantacos #highfiberdiet #highfiberrecipe #healthydinnerideas #healthyfood #healthyliving #antiinflammatorydiet #antiinflammatoryrecipe
