Line an 8x8-inch baking dish with two layers of aluminum foil for easy cleanup. Make the Glaze In a small bowl, whisk together the Dijon mustard, maple syrup, rice wine vinegar, salt, and black pepper until smooth. Coat the Chicken Place the chicken thighs in the prepared baking dish, then pour the mustard-maple mixture over them. Turn the chicken thighs in the sauce to coat them thoroughly. Bake the Chicken Bake, uncovered, for about 40 minutes, or until the chicken reaches an internal temperature of 165°F. Prepare the Sauce Remove the chicken from the oven and let it sit for 5 minutes. Transfer the chicken to a plate, keeping the liquid in the pan. Whisk 1 tablespoon of cornstarch into the hot pan juices to create a thickened sauce.
