Easy Barbacoa Tacoss 🌮 (slow cooker recipe) * 3 lbs beef chuck roast, cut into large chunks * Salt & pepper, to taste * 2-3 bay leaves * 2 tbsp vinegar For the Red Sauce: * 3 Roma tomatoes * ¼ onion * 7 garlic cloves * 4 dried guajillo chiles, seeded * 5 dried California chiles, seeded * 1 Anaheim pepper * 1 cup water * 1 tsp oregano * 1 tsp cumin * ¼ tsp cinnamon * ¼ tsp ground clove * Salt & pepper, to taste Instructions: 1. Sear the Meat: * Season the beef with salt and pepper. * Heat a cast iron skillet over high heat. * Sear the beef on all sides until browned, then transfer to the slow cooker. 2. Make the Red Sauce: * In the same hot skillet, add Roma tomatoes, onion, and garlic cloves and Anaheim pepper * Cook until slightly charred and tender. * Add guajillo and California chiles, toss for a few seconds, then pour in 1 cup of water. * Let the chiles soften for about 5 minutes, then transfer everything to a blender. * Add oregano, cumin, cinnamon, clove, vinegar, salt, and pepper. * Blend until smooth. 3. Cook the Barbacoa: * Pour the red sauce over the beef in the slow cooker. * Add bay leaves, cover, and cook on HIGH for 6-8 hours, or until the meat is tender and easily shredded. 4. Shred & Serve: * Remove the bay leaves, shred the beef with two forks, and mix with the sauce. * Serve in tacos, burritos, or with rice and beans. #mexicanfood #mexicanrecipe #barbacoa #barbacoatacos
