Ingredients (for 2): • 200g pumpkin (peeled and cubed) • 2 Italian sausages (skin removed) • 220g pasta • 20g Parmigiano • ½ onion • Salt & black pepper Instructions: Peel and cube the pumpkin, removing seeds. Boil pumpkin with half an onion for about 10 minutes or until soft. Meanwhile, cook the sausage meat in a separate pan until browned and crispy. Remove the pumpkin from water (keep the water), and cook the pasta in the same pot. Blend the pumpkin and onion with sausage juices until smooth. Drain pasta al dente and toss with pumpkin sauce.
