@practical.nutritionist: ✨Korean Inspired Veggie Filled Beef✨ like, save, and follow @practical.nutritionist for more One of my all time favorite weekday meal preps! I’ve had soooo many clients and members in The Path add this one to their weekly rotation! It’s soooo good and you can just keep veggies and beef in the freezer at all times and all the sauce ingredients are pantry friendly for years. It’s so practical and yummy. Ingredients for a large batch: - 2 lbs lean ground beef - 4-6 large carrots, sliced - 2 bunches broccoli or one large head , cut into florets - 1 onion - 4 cloves garlic - Salt and pepper to taste - 1 tbsp sesame oil Sauce Ingredients * 3 tbsp Sesame Oil * 3 tbsp Rice Vinegar * 4 tbsp Sriracha * 4-6 tbsp coconut sugar (can sub brown sugar) * 1 cup Soy Sauce Garnishes * 1 bunch Green Onions * 2 tbsp Sesame Seeds Directions: 1. To a large skillet, steam broccoli and carrots with 1/2 cup water and salt until fork tender. 2. While that’s steaming, prepare your sauce by adding all the ingredients to a bowl. Mix well and set aside. Chop onions and garlic. 3. Remove steamed vegetables from the pan, set aside. And back to the pan add 1 tsp sesame oil, onions, and garlic. Sauté until translucent and fragrant. 4. Add beef and cook until browned. Add back vegetables and sauce. Simmer on low for ~5-10 minutes. Serve over rice and enjoy!
