just curious, has anybody else come across rubbery tough bone in skin on chicken thighs when cooked? I sous vide first then froze and reheated in the air fryer wondering maybe the freezing and the air fryer made a difference?

I keep a scrap bag in the freezer and add all the carrot peels, onion skin/tops, and celery bits from other recipes and use those in my bone broth or to make veggie stock. Saves some $
