The egg needs to be put directly on toast or component that can absorb the runny yolk. That flat lettuce sheet acts like a moisture barrier. Chopping up lettuce would decrease the mess factor

I 100% thought the poached egg trick was going to be sticking the whole colander into the boiling water far enough for the egg to be submerged.
