@chefdaniellesepsy: Another single serving cookie recipe to add to your rotation - tahini chocolate chunk! Ingredients: 1 tablespoon unsalted butter, at room temperature, soft almost melted 1 tablespoon tahini ( well stirred before you measure it)I prefer roasted tahini for a more robust flavor! 1 tablespoon granulated sugar 1 tablespoon packed light brown sugar 1 teaspoon ground flax meal mixed with 1 teaspoon water 1/8 teaspoon vanilla bean paste or extract 3 tablespoons of Bread flour (the extra gluten in the bread flour makes for the perfect crisp edge gooey center!) 1/8 teaspoon baking soda 1/8 teaspoon fine table salt 1/4 cup HAND CHOPPED chocolate chunks (I did half bittersweet and half milk from Trader Joe’s) Garnish- flaky Maldon sea salt and white sesame seeds Steps: 1. Stir together the flax meal and water and let sit for a couple minutes to thicken. 2. In a small bowl stir together the butter, white sugar, light brown sugar and vanilla and stir until well combined. Stir in the tahini paste until combined. 3. Add in the flax mixture followed by the salt and baking soda. Finally add in the bread flour and stir just until combined into a dough. Finally add the hand chopped chocolate chunks. 4. Form the dough into a ball and chill for 30 minutes in the fridge or freezer 5. Preheat the oven to 350F convection (or 375F bake) 6. Place the dough ball on a parchment lined cookie sheet and sprinkle the top with a pinch of flake sea salt. 7. Bake for 10 minutes then remove from the oven and tap the pan on the counter a few times to help it spread. Sprinkle the top with a pinch of white sesame seeds. 8. Bake again for 2-4 minutes or until it spreads a bit and starts to crack on top. When you take the cookie out of the oven tap the pan on the counter a couple times again. It is done when the cookie has spread and the edges are golden and you see pools of the chocolate. 9. Allow it to cool 10 minutes to set it a bit then enjoy!!
