Guys the whole point of this stew is to mimic how people would use to do it. They would use any ingredients such as vegetables or meats that were on hand at the time. He is t making an exact recipe to follow

Fresh greens including herbs should always be added at the very end or even just once plated. Btw that adds another element. Accoutrements and garnishes. You can also consider things like sourcream/creme fraiche, finishing oils etc. Im definitely not one of those people that needs 1000 different powdered seasonings but it could be interesting to experiment with a few spices especially unground ones. I totally understand if that distracts from the stew itself which is obviously the whole point of your series.
