Ramadan Recipes: Chicken & Egg Breakfast Muffins This recipe makes 6 breakfast muffins, each consisting of 30g protein per serving! Recipe for the Chicken Sausage: - 500g chicken breast mince - 1 tsp onion powder - 1 tsp garlic powder/granules - 1 tsp paprika - 1 tsp oregano - 1/2 tsp black pepper - 1/2 tsp salt or to taste - 2 tbsp breadcrumbs Recipe for the Egg: - 5 eggs - 1 small red onion - 1/2 red pepper - 1 tbsp chopped coriander/parsley - 50g crumbled feta - Salt & pepper to taste Method: 1. Mix ground chicken with seasonings and let it rest for 1 hour to marinate. 2. Shape into six patties. Heat 2 tbsp oil in a pan and cook for 3–4 minutes per side until slightly charred, or air-fry at 180°C for 8–10 minutes, flipping halfway. 4. 4. Whisk eggs with veg and seasonings. Heat 1 tbsp butter in a pan over low heat, pour in eggs, cover, and cook for 5–6 minutes. Flip and cook for another 4–5 minutes. 5. Slice English muffins, add sauce, a chicken sausage patty, cheese, and egg, then top with the other half. Wrap in foil and freeze. 6. To reheat, thaw in the fridge overnight, then air-fry at 160°C for 10 minutes with the foil on. Enjoy! #ramadanrecipes
