These findings, including ancient wine vessels known as "kvevri," reveal that as far back as 6000 BC, Georgians were mastering the art of winemaking! Kvevri, large earthenware pots, are buried underground to ferment, store, and age the wine, a unique method that contributes to the distinct character of Georgian wine and is still in use today. Georgia's diverse climate and topography across its various regions, from the snowy peaks of the Caucasus Mountains to its lush valleys, boast ideal conditions for viticulture. With over 500 indigenous grape varieties, the country encompasses a rich palette of flavors and aromas in its wines. Among these, the red grape variety Saperavi and the white grape variety Rkatsiteli are particularly popular. The traditional Georgian feast, or "supra," is led by a toastmaster, or "tamada," who guides guests through a series of toasts, often with a glass of wine in hand, reflecting the deep social and spiritual connections Georgians have with wine. In the Soviet era, Georgian wine played a vital role in the economy, with the region designated as a primary winemaking area within the Soviet Union. However, this period also led to a focus on quantity over quality. Following the dissolution of the Soviet Union, Georgia faced challenges in maintaining its wine industry, but it has since undergone a significant revival. Today, Georgian wine is gaining international recognition, with a growing appreciation for its traditional winemaking methods, particularly the kvevri method, which was added to UNESCO's Intangible Cultural Heritage list in 2013.
