Cook the Bacon: - Grill or pan-fry until lightly browned. 3. Make Hollandaise Sauce: - In a blender or or bowl combine egg yolks, lemon juice, vinegar, - Blend until smooth. - In a saucepan, melt butter over low heat. - Slowly pour butter into egg yolk mixture, whisking constantly. - Season with salt and pepper. 4. Assemble Eggs Benedict: - Toast and butter English muffins. - Top each muffin with Canadian bacon, a poached egg, and a spoonful of Hollandaise sauce. Tips and Variations: • Use homemade or store-bought bacon. • Substitute lettuce with spinach or add hash browns. •Prepare Hollandaise sauce and refrigerate overnight or freeze for up to 2 months.
