Mayo is literally eggs, I don’t care how preserved it is. Dijon and yellow mustard is fine to keep, ketchup for a year is bad, I’ll use soy sauce until it tastes bad lol

I’m scarred from my mom’s condiments in her fridge that expired 3+ years ago 😭 anything possibly dairy? Gone after 3 weeks of opening. Anything vinegar or in a brine? Keeping for a bit but also questioning if I’m ill every time I eat it out of anxiety 😅
