I’m so ready for fall baking 🍁 Pumpkin Cinnamon Rolls with brown butter cream cheese frosting (Recipe adapted from tastesbetterfromscratch.com) Ingredients for the dough: ½ cup whole milk, warmed (about 110°F) 2 teaspoons active dry yeast ¼ cup granulated sugar, divided ¼ cup unsalted butter, melted ½ cup pumpkin purée (canned or homemade) 1 egg, room temperature ¼ teaspoon salt ¼ teaspoon baking soda ¼ teaspoon baking powder 1 teaspoon ground cinnamon 3 ½ cups all-purpose flour Ingredients for the filling: ¾ cup light brown sugar, packed 1½ tablespoons ground cinnamon ¼ teaspoon ground nutmeg ¼ teaspoon ground allspice ⅛ teaspoon ground cloves ¼ cup pumpkin purée 1 stick (½ cup) unsalted butter, softened Instructions: Activate the yeast by combining warm milk, yeast, and 1 tablespoon sugar in a small bowl. Let sit for 5 to 10 minutes until foamy. In a large bowl, combine all the dry ingredients: flour, remaining sugar, salt, baking soda, baking powder, and cinnamon. Add the yeast mixture, melted butter, pumpkin purée, and egg to the dry ingredients. Mix everything together until a soft dough forms. You can use a stand mixer with a dough hook or mix and knead by hand. If the dough is too sticky, add a little more flour, but be careful not to add too much. Knead the dough about 8 to 10 minutes by hand or 5 to 6 minutes in a mixer until smooth and elastic. Place the dough in a greased bowl, cover, and let rise for 1 to 1½ hours until doubled in size. Prepare the filling by mixing butter, brown sugar, pumpkin purée, cinnamon, nutmeg, allspice, and cloves in a bowl until smooth. Roll the dough out on a floured surface into a 12 by 18-inch rectangle. Spread the filling evenly over the dough. Roll tightly from the long edge into a log. Slice into 12 equal pieces and place them in a greased 9 by 13-inch pan. Cover and let rise for 30 to 45 minutes until puffy. Bake at 350°F (175°C) for 22 to 26 minutes until golden brown. Brown Butter Cream Cheese Frosting Ingredients: ½ cup (1 stick) unsalted butter, browned 1 block (8 oz) cream cheese, softened 2½ to 3 cups powdered sugar, sifted 1 teaspoon vanilla extract Pinch of salt Instructions: Brown the butter by melting it in a saucepan over medium heat, stirring frequently. Once it turns golden amber with brown specks and smells nutty, remove from heat. Immediately pour the browned butter over the softened cream cheese and gently mix until combined and creamy. Add vanilla extract and salt, then gradually mix in powdered sugar. Adjust the amount of powdered sugar to achieve your preferred sweetness and consistency.
