I just realized, when Gamora and Nebula sparred or faced each other, Gamora saw herself better and Nebula saw herself inferior to her sister after each lost numerous times. She never learned the decent mutual respect and acknowledgment of proficiency. She only knew lost and pain. Here she finally learns those things, winning against an opponent but instead of a stern cold reaction, she’s granted a modest warm sportsmanship of respect and kindness in her victory. Though small, it means a lot to her.

I think she backs away when she wins because she thought he was going to be mad, that’s why Tony says good sport, she grew up with gamora always wanting to win, when all she wanted was a sister she’s probably scared to win at that point because she’s has it ingrained in her that losing is torture and pain, so when Tony says “fair game, good sport” he’s reassuring her because he picked up on her backing away.
