Low-FODMAP Miso Tofu with Kale Ingredients: 1. 1 (16 oz) block super firm or extra firm tofu 2. 1 bunch kale (my favorite kind is lacinato) 3. 2 (scant) tbsp olive oil 4. 2 tbsp corn starch 5. 2 tbsp white miso paste 6. 1/3-1/2 cup hot water 7. pepper to taste Directions: 1. If using extra firm tofu, press for 10 minutes. Cut tofu into one-inch cubes 2. Over medium heat, add scant tbsp of olive oil into a pan and add tofu. Toss to coat 3. Sprinkle corn starch over tofu and toss to coat 4. Once tofu is slightly golden brown, take off heat and put it to the side 5. Devein, chop, and wash kale 6. Over medium heat, add scant tbsp of olive oil and kale. Sautee until kale has wilted and slightly softened 7. Add tofu back into the pan. Sprinkle pepper in 8. In a bowl, mix together hot water and miso paste. Once mixed together, add to pan 9. Toss tofu and kale in miso mixture for a few minutes until miso mixture begins to reduce down 10.
