Welcome to the series where I show you lots of different desserts that you can make with a can of pumpkin 🎃 For episode 1: we are starting STRONG with these pumpkin cinnamon rolls. These have a soft, fluffy pumpkin dough, cinnamon sugar and vanilla bean cream cheese frosting. They are SO good and the perfect way to start getting into autumn/ fall baking. Full details below.  Ingredients  350g / 3 cups plain white flour  1 packet (7 g) instant dry yeast  60g / 2/3 cup caster sugar  200g / 4/5 cup nut milk  40g / 1/4 cup butter (+ extra to grease tray) 85g / 3/8 cup pumpkin purée  for the filling/topping  1/2 tsp cinnamon powder 1/4 tsp nutmeg  1/4 tsp mixed spice  3 tbsp white sugar  4 tbsp butter  4 tbsp soft light brown sugar  50g / 1/2 cup icing sugar  150g / 2/3 cup cream cheese  1 tsp vanilla bean paste  Instructions  1. Warm your milk in a bowl until luke warm. Then add the sugar and yeast. Whisk together briefly, for 1-2 seconds. Let it sit for 5 minutes. 2. Add the milk to a larger bowl and add the melted butter and 3/4 flour. Spoon together (it will be quite lumpy). Then, add your dough to a standing mixer on a medium speed with a dough hook. Add the pumpkin and rest of the flour as it mixes. Continue mixing for around 2 minutes until a dough ball forms. Then stop the mixer. Cover your bowl with a towel and let it rise in a warm area for 30 minutes.  3. Pre-heat your oven to 180°C/ 356°F. 4. Mix the butter, white sugar, cinnamon, nutmeg and mixed spice in a bowl.  5. Place your proved dough onto a floured surface and roll it into a rectangular shape. Add some flour whilst rolling if needed. Spread your cinnamon mixture on top. Sprinkle the brown sugar on top.  6. Roll the dough up into a log. Cut into equal shapes using floss! I discarded the edges and had 9. 7. Place into a greased baking tray and bake for 20 minutes.  8. Combine the icing sugar, cream cheese and vanilla paste in a bowl.  8. Remove the rolls and leave for a few minutes. Then spread the frosting on top. Devour!
