Papa says, “ Thanks for watching” 🥹 So you better (and try his recipe), or else.. ➡️ Recipe: Papa Tea’s Potato 🥔 Chicken— * 3 large russet potatoes peeled, cut into 1/2 inch thick slices * 1 small sweet onion, 1/4 inch slices   * 2 garlic cloves, finely minced  * 2 stalks green onions, thinly sliced * 4 cups fry oil, peanut or canola oil Chicken— * 1/2 lb chicken boneless skinless chicken thighs or breast, 1 in cubes * 1 tbsp oyster sauce  * 1/4 tsp garlic powder  * 1/4 tsp onion powder * 1/8 tsp ginger powder * 1/2 tsp kosher salt  * 1/2 tsp chicken bouillon * 1 tbsp cornstarch  * 1/2 tbsp oil, I use avocado oil * 2 tbsp water Sauce—  * 1/2 cup chicken broth  * 2 tbsp oyster sauce  * 1 tbsp soy sauce  * 1 tbsp sugar  * 1/2 tbsp coarse black pepper  1. Peel potatoes and slice into 1/2 inch thick strips. Set aside. (Note: Papa Tea uses a rippled knife to cut the potatoes but this is optional and only for aesthetics)  2. Marinade chicken with oyster sauce, garlic powder, onion powder, ginger powder, kosher salt, chicken bouillon, cornstarch, oil and water. Mix well and set aside. 3. In a bowl combine chicken broth, oyster sauce, soy sauce, sugar and black pepper. Mix well and set aside. 4. Heat fry oil to 350F in a large wok. Fry the potatoes for 4-5 mins or until lightly golden. Strain and set aside. (Note: if air frying make sure to spray sliced potatoes with oil and air fry at 350F for 4 mins, flip, then another 4 mins on the other side. 8 mins total cook time) 5. Heat 2-3 tbsp of cooking oil in a wok or large pan and sauté garlic for 30 seconds. Add the marinaded chicken.  6. Cook chicken until 90% cooked through then add the sliced onions. Cook until onions are slightly translucent and chicken are cooked through. 7. Pour all of the sauce into the wok then add all of the fried potatoes. Mix well and sauce will slightly thicken.
