One-Pan Creamy Lemon Chicken Orzo 🍋 I know this is a bold claim, but I honestly think this is one of the best recipes I’ve ever made. Top five for sure! It's one of those recipes that doesn’t take a ton of time or effort, but it sure tastes like it does. I seasoned my chicken with plenty of smoked paprika, so the color of the orzo is darker than your typical lemon orzo, but season your chicken however you like. Let me know if you make this one! Here’s the full recipe: 3 T butter Olive oil Salt and pepper, to taste Red pepper, to taste Italian seasoning, to taste 2 chicken breasts, seasoned to taste 1 shallot, minced 3 cloves garlic, grated (to taste) 1/4 cup dry white wine (I used sav blanc) 1 cup orzo 2 cups chicken broth 1/2 cup heavy cream (or less, to taste) 1-2 T lemon juice, to taste 1 T lemon zest, to taste Grated parmesan, to taste (I used about 1/2 cup) Parsley, to garnish 1. In a large pan, melt 1 T of butter over medium heat. Add in your seasoned chicken and cook for about 5-6 minutes. Flip, cover, and cook for another 5-6 minutes or until no longer pink (165 F internal). Remove from pan, cover with foil, and let rest. 2. Reduce heat to med/low. In the same pan, melt another T of butter and a touch of olive oil. Add in your shallot and stir. Sauté for a couple of minutes. Grate in your garlic cloves and stir.  3. Pour in your white wine and stir, scraping up any brown bits on the bottom of the pan. Simmer for about 5 minutes, stirring and scraping occasionally, or until the wine has noticeably reduced. 4. Pour in your chicken broth and season with a pinch of salt. Stir and simmer, stirring occasionally, for 10-12 minutes. 5. Once your orzo is done, add in your final T of butter and heavy cream. Stir.  6. Sprinkle in your parmesan, lemon zest, and juice. Add in some black pepper, and taste for salt. Adjust seasonings as needed. 7. Slice your chicken and serve alongside your orzo. Top with more freshly grated parmesan, lemon juice, and parsley. Enjoy!
