Russian Mini Cheesecake Sirkini ⠀ This is a famous Russian breakfast loaded with protein. Traditionally made by frying over the stove, I prefer baking in the oven for a healthier option. I also love adding some berries and chia seeds to the recipe. Give it a try and let me know how you like it! ⠀ Ingredients: - 250g (about 1 cup) ricotta cheese - 1 large egg - 2 tablespoons sugar - 1 teaspoon vanilla extract - 1,5 cup all-purpose flour (plus extra for dusting) - Pinch of salt - Spray oil - 1/2 cup raspberries - 2 teaspoons chia seeds ⠀ Instructions: 1. In a large mixing bowl, add raspberries and chia seeds and smash with a fork. Let the chia seeds soak in the juices of the berries for 5 minutes. Add the ricotta cheese, egg, sugar, and vanilla extract. Mix until well combined. 2. Add the flour and a pinch of salt to the mixture. Stir until the flour is fully incorporated and a dough-like consistency forms. 3. Dust your hands with flour to prevent sticking, then take about 2 tablespoons of the mixture and shape it into a small patty. 4. Place the shaped sirniki onto a baking sheet covered with parchment paper. Bake in a preheated oven at 350°F for 20 minutes. 5.
