Ingredients: 1 cup long grain white rice (or basmati) 2 cups chicken broth (or water with bouillon) 2 tbsp olive oil 2 tbsp lemon juice Zest of 1 lemon 1 garlic clove, minced 1 tsp dried oregano Salt + pepper to taste Optional: chopped parsley for garnish Instructions: 1. In a saucepan, heat olive oil over medium heat. Sauté garlic until fragrant (about 30 sec). 2. Add rice and stir to coat in the oil. 3. Add broth, lemon juice, zest, oregano, salt, and pepper. Stir once. 4. Bring to a boil, then cover and reduce heat to low. Simmer 15–18 minutes until liquid is absorbed. 5. Remove from heat and let sit, covered, for 5 more minutes. 6. Fluff with a fork and top with parsley.
