[Ingredients] Hennessy X.O 40ml Homemade Sake Lees Sour Cordial 20ml Homemade Rice Milk 40ml Matcha Powder 1tsp Garnish Powdered Tea Leaves (Made from spent tea leaves warmed in a chakoro tea roaster) Homemade Kuzu-kiri starch noodles (as an edible chaser) Bonsai Moss Miniature stone lantern [Cocktail Recipe] Matcha Chaser Matcha is whisked in a tea bowl and served as a chaser to guests. Drinking matcha is a delightful way to stimulate the appetite while guests wait for the bartender to prepare their cocktail. 1. Using the candle under the chakoro tea roaster, light an incense sticks made from natural ingredients, and capture the fragrant incense smoke inside the Saki Glass. 2. Combine Hennessy X.O, Homemade Sake Kasu Sour Cordial, Homemade Rice Milk, and the matcha powder in a cocktail shaker. Mix all ingredients together with a frother wand, and taste to check the balance of flavors. 3. Add ice to the shaker and shake with a ‘Katana (sword) shake’ to create ultrafine bubbles that give a silky texture to the cocktail. 4. Pour the cocktail into the smoke-filled glass. 5. Lightly sprinkle the powdered Hojicha tea leaves and sesame seeds on top. 6.
