Replying to @Stormur of Iceland this is my second time making seitan ham charcuterie and this batch is even more delicious than the previous batch! This time I cured my seitan in shio koji and brown sugar rather than the plain salt and brown sugar. The other difference is I used used food coloring instead of red rice yeast powder to color my seitan (@Micro Ingredients discontinued it 😭 please bring it back🙏🙏🙏) What I did was wash the starch out of the bread flour for two large dough balls. One dough ball had red food coloring added to it, the other one had no color added. I saved the wheat starch and poured off the water that surfaced to the top. I added 1 cup of the starch water to about half a block of butter with about 2 tbs of vegan bacon seasoning. I massaged that into the gluten to flavor it. Then I ripped the gluten and layered it together so there could be some pockets of butter and additional texture in the seitan. I tightened wrapped it in parchment paper then foil and steamed it for 90 minutes. After it cools, unwrap it and then cover in shio koji and brown sugar. In my next video I’ll post how I made my Shio koji, but I have posted Shio koji recipes previously as well if you scroll back. I coated the entire surface in the cure and left it in the fridge for 5 days, flipping it daily. After you rinse it off it’s ready to eat! And damn, it’s delicious
