✨Chocolate Crepe Cake✨ This crepe cake is the perfect treat to make for a weekend brunch, a birthday, or just because🥰 The delicate chocolatey crepes are stacked between a creamy filling of vegan cream cheese and a sweet and tangy raspberry spread🍓 For the best raspberry spread made with real fruit and without cane sugar and preservatives, I used @stdalfourusa 🥰 ✨Cake 2 2/3 cups all-purpose flour (320 g) 1/4 cup sugar 1/4 cup cornstarch  1/4 cup cocoa powder  3 1/3 cups dairy-free milk 2 tbsp neutral oil 1 tsp vanilla 1/2 tsp salt ✨Layers @stdalfourusa Red Raspberry Fruit Spread vegan cream cheese ✨Top 1/2 cup vegan heavy whipping cream 1/4 cup vegan cream cheese 1/4 cup powdered sugar 1 tsp vanilla ✨Directions In a large bowl, combine the flour, sugar, cocoa, cornstarch, salt, milk, oil, and vanilla. Combine all of the ingredients well until you have a runny batter. Lightly grease a pan and turn the heat to medium. Scoop up a ladle of batter and pour the batter into the pan (about 1/4 cup at a time). As soon as you have poured the batter, grab the pan by the handle and swirl the pan so that the batter is evenly distributed in a thin layer. Cook for 2-3 minutes, then flip and cook for another minute on the other side. Repeat for all of your pancakes. Once the crepes have cooled, start layering them on a large plate. Spread a layer of @stdalfour red raspberry fruit spread on top of the first layer of chocolate crepe, then add a layer of vegan cream cheese on top of the next layer, and alternate until you run out of crepes.
