EASY SUMMERTIME SHRIMP SALAD 🥬🍤🍅 This vibrant and refreshing salad is impressive but takes little effort to make, plus you only need to turn the stove on for about 5 minutes! Hope you love it 🤍 Apron is linked in bio 🥂 Prep time: 15 minutes + marinating time Cook time: 5 minutes Serves: 4-6 For the shrimp: 1 lemon, halved 3 medium cloves garlic, peeled and smashed 2 bay leaves 1 teaspoon black peppercorns 1 teaspoon cajun seasoning 1 ½ teaspoons kosher salt 1 pound extra-large shrimp (21–25 count per pound), peeled and deveined with tails on For the dressing: ¼ cup freshly squeezed lemon juice (from about 2 medium lemons) 1 medium shallot, finely diced (about ¼ cup) 1 medium clove garlic, grated 2 teaspoons dijon mustard ½ teaspoon kosher salt, plus more to taste ¼ teaspoon freshly ground black pepper, plus more for garnish ½ cup extra-virgin olive oil For the salad: 2 heads butter lettuce, leaves separated and thoroughly washed and dried 1 cup multicolor cherry tomatoes, halved 2 large stalks celery, thinly sliced on the bias (plus celery leaves reserved for garnish) ½ English cucumber, diced 1 avocado, sliced 2 tablespoons chopped fresh chives, for garnish 1. Prepare an ice bath by filling a large bowl with ice and water. Set aside. 2. To a large high-sided skillet, add 2 ½ cups of water. Squeeze the juice from the lemon halves into the water and place the juiced halves into the water as well. Add in the garlic, bay leaves, peppercorns, cajun seasoning, and salt. Bring the mixture to a rolling boil. Once boiling, turn the heat off and quickly add the shrimp in an even layer, making sure they are all submerged. Let the shrimp sit in the water until pink and just cooked through, 3 to 5 minutes. Transfer to the prepared ice bath until cooled, about 2 minutes. 3. In the meantime, make the dressing. To a large mixing bowl, add the lemon juice, shallot, garlic, dijon mustard, salt, and pepper. While whisking vigorously, stream in the olive oil until slightly thickened and well combined. Taste and adjust for seasoning if desired and set aside. 4. Once the shrimp are cooled, drain well and add them to the mixing bowl with the dressing along with the cherry tomatoes and celery. Set aside and let marinate for 15 minutes. 5. When ready to serve, add the butter lettuce to a large platter or salad bowl (tearing any large leaves and leaving the smaller leaves whole). Spoon the marinated shrimp, tomatoes, and celery onto the lettuce and top with the cucumbers and avocado.
