This chicken salad is the kind of meal people remember. It was brought to me years ago after I had a baby, and I immediately fell in love. The crunch of the apples and grapes, the creamy dressing, and that unexpected pop of dill—it’s slightly different than most, and in the best possible way. It’s my go-to make-ahead meal when company’s coming or life gets busy (like this week—graduation, out-of-town guests, and a house that’s rarely quiet). I love having something in the fridge that’s ready when anyone’s hungry. Chicken Salad Ingredients: • 1 lb cooked, shredded chicken • 2 cups purple grapes, halved (I usually add more!) • 2 apples, chopped (I add extra for crunch) • 2 ribs celery, chopped (optional) • 2 Tbsp chopped onion (or more) • 1 oz Parmesan cheese • 1 cup mayo • 1 clove garlic, minced • 1 tsp dried dill • ½ tsp salt • Pepper to taste • ½ cup chopped pecans (optional – I skip these because of my nut allergy) Instructions: 1.	In a large bowl, combine the chicken, grapes, apples, celery, and onion. 2.	In a separate bowl, stir together the mayo, garlic, Parmesan, dill, salt, and pepper. 3.	Pour the dressing over the chicken mixture and gently fold to combine. 4.	Serve chilled on buns, croissants, or lettuce wraps. This makes a great meal prep option or quick lunch when you’ve got extra people around—or just want something delicious ready to go. #ChickenSalad #MakeAheadMeals #EasyLunchIdeas #SummerMeals #CrowdFriendly #GraduationWeekEats #ComfortFood #NoNutOption #DeliciouslyBold #FridgeReady #SimpleMeals #MealPrepFavorites #FamilyFriendlyFood #CreamyChickenSalad #kroger
