Creamy Lemon Garlic Chicken: -8 bone in skin on chicken thighs (I used boneless and skinless) -1 cup low fat cottage cheese -1/3 to 1/2 cup avocado oil -juice from 1 lemon -4 cloves garlic minced -1 1/2 tsp salt -1 tsp paprika -1 handful fresh parsley Rinse and pat dry your chicken with a paper towel. Put in a bowl. Mix the cottage cheese, oil, lemon juice, garlic, salt and paprika in a blender. Coat the chicken well with the mixture. Cover the bowl and refrigerate for an hour (optional).
