carrot cake protein cups 🧁🥕🍂 recipe below! *yields 12 cups* INGREDIENTS:  FOR THE BASE LAYER:  - 3/4 cup almond butter  - 1/4 cup maple syrup  - dash of vanilla extract  - 1/3 cup vanilla protein powder  - 1/2 tsp ground cinnamon  - dash of nutmeg  - dash of ground cloves  - 1/4 cup shredded carrots  TOP LAYER:  - 3/4 cup coconut yogurt (I’m unsweetened vanilla from @Forager Project)  - dash of maple syrup for sweetness *optional - scoop of vanilla protein powder  - 1/4 tsp ground cinnamon - dash of nutmeg  - 2-3 tbsps shredded carrots *optional FOR TOPPING:  - whatever your heart desires !!!!  - i did some leftover shredded carrots and roughly chopped pecans, but you could keep it simple & just do cinnamon if desired!! INSTRUCTIONS:  - in a large bowl, combine all of the ingredients for the base layer (listed above). Mix until you reach a nice cookie dough consistency. Form into 12 balls.  - Line your muffin tins, add a ball into each liner. Press into an even layer. Then pop in the freezer to set ~30 minutes.  - In a medium sized bowl, combine all the ingredients for the top layer (listed above). Mix until well combined. - Place 1-2 tbsps of the yogurt topping mixture into each muffin tin. Spread into an even layer. Finish with whatever toppings your heart desires, then pop in the freezer to set 1-2 hours.
