Been on a shortbread cookie kick lately, and these are just 😮‍💨 Inspired by @shineshka INGRDIENTS 1 1/4 cup all-purpose flour 1/3 cup + 1 tbsp granulated sugar 1 tbsp cornstarch 1/4 tsp salt 10 tbsp butter cold and cut into 1/2. Inch cubes 1/4 cup fresh cranberries finely chopped 1/2 tbsp orange zest 1 tbsp orange juice FOR GARNISH 2/3 cup powdered sugar 3 tsp orange juice (I halved this and used on half the batch, the other dipped in chocolate) INSTRUCTIONS In large mixing bowl with paddle attachment mix flour, sugar, cornstarch and salt. Add butter cubes and mix until well combined and dough looks crumbly. Add orange juice and mix until dough comes together. Stir in orange zest and cranberries. Place mixture onto mat or parchment paper, place another sheet of parchment paper on top and roll into 4x12 rectangle. Freeze dough for 20 minutes to firm up. Preheat over to 325°F Slice dough into 20-24 sticks and place on a lined cookie sheet. Bake for 15-20 minutes, or until edges start to lightly brown. Reshape the cookies with offset spatula by squeezing from both sides (If you feel like it) Allow cookies to cool. Combine powdered sugar and orange juice and drizzle over cooled cookies. (If you do the chocolate, melt your chocolate chips and dip or spoon the chocolate over half the cookies) #BakeWithMe #shortbreadcookies #treats
