Cheesy breakfast burrito ft. Crispy lechon, egg & yucca tots with garlic and herb aioli 🔥 My 🇨🇺 spin on a weekend brunch favorite 🤤 Ingredients: 2 cups of cheddar cheese Burrito wraps Scrambled eggs 2 cups of cooked lechon For the garlic & herb aioli: 1 cup fresh cilantro leaves 4 garlic cloves 1½ tablespoons olive oil 1 cup mayonnaise ½ teaspoon salt For the yuca: 1½ lbs. fresh yuca, peeled and cut into large chunks. You can also use frozen yuca Instructions: To make the garlic & herb aioli, add the cilantro, garlic, and olive oil to a food processor. Blend on high until a smooth green paste forms. Transfer to a bowl and fold in the mayonnaise and ½ tsp. of salt until fully combined. To make the yea tots, bring a large pot of salted water to a boil. Add the yuca and cook for 15–20 minutes, or until fork-tender. Drain and let cool to room temperature. Once cooled, remove the tough, fibrous core from each piece of yuca and cut into 1-inch chunks. Heat the oil in a deep skillet or fryer to 350°F. Fry the yuca pieces in batches until golden and crispy, about 3–4 minutes per batch. Drain on paper towels and season immediately with a pinch of salt.
