Knafeh the easy 30 minute way. Check it out, Ingredients: -Frozen knafeh dough, 16 oz. Package. Find in any Middle Eastern store. Or simply buy a shredded kataifi dough and grind finely in the food processor. Mix it in with 1 cup of butter or preferably ghee.  -60 g of butter or ghee for the pan/ I used a 14 inch shallow pan. -1 1/4 cups of simple syrup ( mix 1 1/4 cups of sugar and 1 cup of water plus 1 tbsp lemon juice, boil for 2 minutes. -10 oz. Akawi cheese sweet not the salty kind.  -16 oz. Ricotta cheese  * you can choose to use only akawi cheese so you need to use 18 oz in that case.  * If you can’t find akawi use panela cheese or mozzarella.  -1/4 cup raw pistachios -2 tbsp pine nuts Preparation: You can’t go wrong with a ready mixed knafeh dough. It has ghee mixed in already. All you have to do is defrost. Smother the pan with room temperature clarified butter or ghee. Spread the whole amount of dough, press firmly. Add the mix of cheeses ( akawi and ricotta). Spread and cook on top of the stove, keep rotating on medium to low heat. It will take up to 20 minutes. Pat the wetness on top of the cheese with a kitchen paper towel. You’ll be able to tell it’s done when the edges develop a golden color and the cheese melts. Flip into a bigger pan. Add 1/4 cup of hot simple syrup and pine nuts. Place in a 350 oven for 5-7 minutes. Just enough to toast the pine nuts. Remove ,add 3/4 cup of syrup and garnish with pistachios and serve.
