Straight from the Italian coast to your table in under 30 minutes. Ingredients (2 pax): • 220g spaghetti • 500g clams • 1 garlic clove • 1 glass white wine • 1 chilli • ½ tsp tomato paste • 5 cherry tomatoes • 1 anchovy (optional) • Fresh parsley • Olive oil & salt Instructions: In a cold pan, add olive oil, garlic, chilli, parsley sprout, anchovy, and tomato paste. When garlic turns golden and anchovy melts, remove garlic, parsley, and chilli. Add clams, deglaze with white wine, let alcohol evaporate, then cover until clams open. Remove clam meat, leaving a few in shells for garnish. Add cherry tomatoes to the sauce and cook for 2 minutes. Toss in al dente spaghetti, add chopped parsley, and cook 2 minutes. Plate, drizzle with sauce, garnish with whole clams and parsley.
