This is the final Harvest of my garden Black Currants and this time I decided to bake Blackcurrant Crumble Muffins with them.  Do you remember my panna cotta recipe that I shared few days ago using my garden blackcurrants? These Crumble Muffins are ideal for summer. They are sweet, slightly tangy , and slightly crunchy with crispy crumbs. For detailed recipes, please visit my YouTube channel. Follow me here @shakilaskitchenandvlogs  Ingredients: For the Muffins: - 1 egg (size M) - 80 g sugar - 80 ml vegetable oil - 1 tsp vanilla extract - 60 ml milk (I skipped) - 150 g self-raising flour (or all-purpose flour, add 1 tsp baking powder and 1 pinch of salt) - 100 g black currants (fresh or frozen) For the Crumble: - 50 g all-purpose flour - 30 g sugar - 30 g cold butter, cubed Instructions: 1. Preheat the oven to 180°C (350°F). Line a muffin tin with six paper liners. 2. In a large bowl, whisk together the egg, sugar, vegetable oil, and vanilla extract. 3. Sift in the flour and stir until just combined (do not overmix). Gently fold in the black currants. 4. In a separate dish, combine the flour and sugar for the crumble. Using your fingertips or a pastry cutter, work the cold butter into the flour-sugar mixture until it becomes crumbly. 5. Divide the batter evenly among the six muffin cups. Sprinkle the crumble evenly over the muffins. 6. Bake the muffins in the preheated oven for approximately 20-25 minutes, until they are golden brown and a toothpick inserted into the centre comes out clean. 7. Remove the muffins from the oven and let them cool in the tin for five minutes, then transfer to a wire rack to cool completely.
