winter pear salad with prosciutto wrapped chicken — a nutritious yet soul-fueling meal that feels restaurant level fancy 🍐 and i couldn’t have done it without my @Gardyn indoor garden! i’ve been growing my own produce with it for 4 months and it’s coming in extra handy now that it’s winter ❄️ the upkeep is hassle-free & super minimal and harvest days are just my fav! check out the link in my bio to get your own Gardyn and use my code MADDIE to save some money 🪴 #ad RECIPE (gluten free): for the maple rosemary pistachios: -1 cup raw shelled pistachios -1/2 tbsp melted butter or oil -1 tbsp maple syrup -1 tsp fresh chopped rosemary -salt + cayenne (optional) for the prosciutto wrapped chicken: -1.5lbs boneless skinless chicken breast (3 breasts, ~3/4” thick) -3oz prosciutto  -olive oil spray  -salt + pepper for the sherry shallot vinaigrette: -1/2 shallot, finely sliced -1.5 tbsp sherry vinegar -3 tbsp olive oil -1 tsp dijon -1 tsp maple syrup -salt + pepper to taste for the winter pear salad:  -4oz mixed greens, roughly torn -1 pear, thinly sliced -2oz goat cheese, crumbled  start by heavily salting your chicken breasts on both sides & leaving out at room temp (this is like a dry brine to make the chicken more tender). then, preheat oven to 250F & line baking sheet with silicone mat or parchment paper. in a bowl, mix together the maple rosemary pistachio ingredients until coated. spread out onto prepared baking sheet & bake for 25-30 minutes. let cool fully. increase oven temp to 400F. wrap prosciutto around chicken, spray with olive oil & season with a bit more s+p. place in baking dish and bake for 20 minutes or until internal temp reaches 160F (will finish cooking as it rests). meanwhile, add shallots to a small bowl with the sherry vinegar, salt & pepper. let it sit for 15 minutes to remove the sharp onion-y taste. then, add remaining dressing ingredients and stir or shake until emulsified. pour dressing over the lettuce and toss to coat. then add pears, roasted pistachios & goat cheese and toss again. plate with the prosciutto wrapped chicken & enjoy! #wintersalads #pistachios #goatcheese #saladrecipes #prosciutto #healthysalads #homegrownfood #pears #DinnerIdeas #healthydinnerideas #chickenrecipes #healthycomfortfood
