I add tomatoes and cucumbers if I have them. I like to add cumin. I eat it all the ways you said but also with pasta (warm or cold) or warm over rice. Sometimes I just eat it with a spoon!

I make something similar. I line a bowl with a tortilla, frozen corn that l microwave, use jarred salsa instead of dressing and sprinkle shredded cheese on top. Quick and easy burrito bowl.
