Marag simach (مرق سمك) Ingredients: - 1 kg fish of steaks of choice - 4 tomatoes - 1 onion - 3 cloves of garlic - 2 big bunches of dill - small bunch of coriander - 3 tbsps tomato paste - 1 tsp ginger paste - chilies optional - 2 cups of long grain basmati rice Spices & aromatics: - salt & pepper - 2 tsps turmeric powder - 2 tsps coriander powder - 2 tsps cumin powder - 2 sticks of cinnamon - 2 lumis ( optional ) - bay leaves - 1 tbsp chicken stock powder - start by seasoning the fish steaks with a tsp of each of the spices then shallow fry them in a bit of oil till nice and golden. - finely dice all the veggies and blend the tomatoes. Then sauté the onion till wilted and add the remaining veggies along with the ginger paste and tomato paste. - stir them on high till the paste changes color then add the tomatoes. - let the sauce cook on medium till thickened ( if it’s too thick add a splash of water) then add the fish steaks into the sauce without stirring them. - let it simmer on low for 30 minutes. - meanwhile wash and soak 2 cups of long grain basmati rice then boil it in a decent amount of water ( 1 liter for each cup of rice) along with salt aromatics and chicken stock powder. - let the rice boil for 6-7 minutes. Strain it place it back into the pot and leave it to steam on its own for 10 minutes. - once the stew has thickened and the fish is soft and succulent it’s ready. - serve it on a bed of rice and enjoy. #food #cooking #fish #seafood #kuwait #stew #arabicfood
