@wellnesswithchantelle: One-Dish Chicken & Rice Curry (Serves 4) 🍛 Ingredients: • 500g chicken breast (cubed or whole) • 3 tbsp curry paste (any kind you like) • 1 can (400ml) lite coconut cream • 1 cup basmati rice (rinsed) • 1 red onion, sliced • 1 zucchini, chopped • 1 capsicum (bell pepper), chopped • 2 cloves garlic, minced (optional) • 1 tsp fresh ginger, grated (optional) • ½ tsp chili flakes (optional) • Salt and pepper to taste • Handful of fresh parsley, chopped • ½ cup water or stock Method: 1. Preheat oven to 180°C / 350°F. 2. In a large oven-safe baking dish, layer ingredients in this order: Chicken → Veggies → Coconut cream → Curry paste → Garlic, Ginger, Chili → Salt and Pepper → Fresh parsley → Rice. 3. Add ½ cup water or stock. 4. Mix gently to combine. Cover with foil. 5. Bake for 50 minutes or until chicken and rice are fully cooked. 6. Uncover for the last 10 minutes to brown the top slightly. 7. Top with more fresh parsley or coriander to serve.
