Pumpkin Spice Horchata 🍂🍁🧡 This traditional Mexican drink is so yummy and refreshing! Adding the pumpkin spice was the perfect touch for fall. Ingredients: - 1 cup long-grain white rice, washed - 2 cinnamon sticks - 1 cup pumpkin puree - 1 teaspoon pumpkin spice - 2 teaspoons vanilla extract - 2 teaspoons pumpkin spice extract - 2 cups water (plus additional for soaking) - 1 can sweetened condensed milk - 1 can evaporated milk - 1/2 cup brown sugar (optional for added sweetness) Instructions: 1. Soak the Rice: Rinse the cup of rice under cold water to remove excess starch. Then, place the rice in a pan with 2 cinnamon sticks and toast it for a nutty flavor. Once it's toasty, add 2 cups of water, cover the bowl, and refrigerate overnight. This will soften the rice and enhance the horchata's flavor. 2. Blend the Mixture: After soaking, transfer the rice mixture to a blender. Add all of the ingredients: pumpkin puree, pumpkin spice, vanilla extract, pumpkin spice extract, sweetened condensed milk, and evaporated milk. (You can add extra whole milk for a creamier taste.) 3. Blend on high for 1 to 3 minutes, until the mixture is smooth and well combined. 4. Strain the Mixture: Using a fine mesh sieve or cheesecloth, double strain the blended mixture into a large bowl. This step ensures a smooth horchata, free of any rice solids. 5. Combine the Ingredients: In the same bowl, mix in the additional water and brown sugar for a sweeter taste. Stir well until the sugar is fully dissolved and everything is evenly combined. 6. Serve: Chill the horchata in the refrigerator or serve over ice. For an extra touch, garnish with a cinnamon stick and a sprinkle of pumpkin spice. This was a lot easier to make than I thought.
