Can you use cold starter to make a loaf? I am needing to put my starter in the fridge at its peak and I didn’t know if I still needed to let it some to room temp?

I am on day 5 of having eve. best decision ever. I tried starting my own in the beginning of summer and it never turned out. It was such a waste of time and bread flour. Thank you for eve and making the process easier. 😅

Hi! Last year I was able to make dough with your recipe and it worked like a charm every time! I moved to a Caribbean Island for Vet School and can not for the life of me get my starter to fully double. It consistently only rises by 1/2, any tips? I’ve made 1 loaf with my starter and it turned out slightly gummy. Could all of this be a heat/humidity issue?

I bought Eve from you! My loafs come out great, however the next day they are SUPER hard. I know about the water trick to soften them back up but is that normal? I wrap them in a bees wrap.
