Place water, pork, onion, garlic and salt in a large pot and cook meat for 2 1/2 to 3 hours. After meat is cooked, remove from pot and let cool to room temperature. 2. Shred pork and remove fat while shredding. Set aside. 3. Reserve 3 cups of the pork broth to use when making the Masa dough. RED CHILE SAUCE 1. Place chiles in the pot you cooked the meat. Simmer Chiles in the leftover pork broth for 20 minutes or until soft. 2. To a blender cup add chiles, garlic powder, onion powder, cumin, salt and pork broth. Blend until smooth. 3. Use a mesh strainer and spoon to strain the sauce. 4. To a large saucepan add 1 cup of lard and heat over medium heat. 5. Add Sauce, stir and add salt if needed. Simmer over low heat for 15 minutes. 6. Add shredded pork, stir to combine and continue simmering for 10 minutes. MASA DOUGH 1. To an X-large bowl add masa dough, 2 cups lards, 2 cups hot pork broth and mix with your hands or a hand mixer until smooth. Assemble tamales Soak corn husks in hot water for 1 hour.
