Chocolate Walnut Brownies (makes16 brownies)
1/4 cup + 2 tablespoons unsweetened cocoa powder
10 tablespoons unsalted butter, at room temperature, divided
1 cup granulated sugar
1 large egg + 1 large egg yolk, at room temperature
1/2 teaspoon pure vanilla extract
1/2 cup all-purpose flour
Large pinch kosher salt
1/2 cup shelled chopped walnuts, divided
Pre-heat the oven to 350 degrees. Line an 8” x 8” square baking pan with parchment paper, leaving an overhang on all sides.
In a small saucepan melt the cocoa powder with 6 tablespoons of the butter.
Remove from heat and cool to room temperature.
Beat the remaining 4 tablespoons of butter with the sugar till light and fluffy. Add
the egg, egg yolk, vanilla and chocolate mixture and beat again. Add the flour and salt and beat once more. Fold in half the chopped walnuts and transfer to your prepared baking pan. Use the back of a spoon or a small angled spatula to smooth the batter evenly in the pan. Top with the remaining chopped walnuts.
Bake for 20 – 30 minutes or till the sides just begin to pull away from the pan. Let cool in the pan on a wire rack. For the neatest cuts refrigerate in the pan overnight.
