3 INGREDIENT, VEGAN, SUGAR-FREE MANGO ICE CREAM  🥭 my dad inspired me to try out some mango ice cream recipes, & none can compete with this one!  If you’ve got ripe mangoes and a can of coconut milk, you’re halfway to the creamiest dairy-free ice cream ever. No churn, no ice cream maker required, just a blender and a little freezer patience. I’ve been making this on repeat with peak summer mangoes and it’s so good. 
🌴 Easy Mango Coconut Ice Cream 🍦
(Adapted from Light Orange Bean) 
Ingredients: * 4 cups frozen mango pieces * 1 tablespoon pure vanilla essence * 3⁄4 cup thick coconut cream (from a chilled can of full-fat coconut milk) * OPTIONAL: Zest & juice from one lime (brightens the flavor) and a 1 teaspoon of ground cardamom 
Instructions: 1. Blend all ingredients until completely smooth. 2. If using an ice cream maker, follow standard instructions for your machine, but if not using, simple pour your ice cream base into a freezer-safe container. 3. Freeze fully, stirring periodically throughout the freezing time if you want it extra creamy. 4. Let sit out for 5–10 minutes before scooping for the perfect consistency!
