ROASTED BUTTERNUT SQUASH SOUP🫶🏻🧡 (recipe below) Ingredients: - 1 butternut squash 🧡 - 2 onions 🧅 - Garlic & rosemary (optional) 🧄 - 400ml milk 🥛 (substitute with milk of preference) - 300ml hot water 💦 - Salt 🧂 - Pepper 🖤 - Cayenne & garlic powder (optional) Instructions: 1. First, preheat your oven to 375 °F. 🔥 2. Next, cut the squash in half and make cross cross cuts on each side. Remove the seeds with a spoon 🥄! Also, cut up the onions into big pieces. 3. Thirdly, oil up the squash and add the salt & pepper! Cover it up and pop it in the oven. 4. Leave covered for 30 minutes. Next, remove the cover and bake for another 30 minutes. 5. Take it out of the oven, and blend in a blender or using a hand mixer. Don’t forget to add the milk and water. Salt and pepper to taste! 6. literally my fav pumpkin dessert: no bake mini cheesecake bites 🎃🧁 (recipe below) Crust: - 4 tbsp brown sugar - 1 tsp cinnamon - 1/4 tsp salt - 2 1/3 cup biscoff biscuit crumbs (or graham cracker crumbs) - 2/3 cup of butter melted Cheesecake: - 1 cup heavy whipping cream - 500g cream cheese - 3/4 cup granulated sugar - 1/4 tsp salt - 2 tsp vanilla extract - 1 tsp lemon juice - 1 cup pumpkin purée - 1 tsp cinnamon or pumpkin spice - Optional: top with biscoff crumbs  Instructions: 1. First, using a mixer whip up ur heavy whipping cream until stiff and place it in the fridge. 2. Second, make your crust by mixing together (with a spoon) the biscoff crumbs, brown sugar, cinnamon, salt & melted butter. Add it to the bottom of your muffin cups and press down with a small glass. (I like to put baking cups so they don’t stick!:) 3. Next, using a mixer, mix together the cream cheese, salt & sugar. Then add in the lemon juice, vanilla extract & pumpkin purée & mix again. 4. Add the cold, heavy whipped cream to the mixture and using a spatula fold it in to combine. 5. Finally, using a spoon or a piping bag add it on top of each crust & sprinkle with some more biscoff crumbs if you’d like! Refrigerate overnight or freeze for an hour before serving!
