i live in an all ingredients household what can I say you’ll need: - 230ml vegetable oil - 100g natural / greek yogurt (full fat) - 4 eggs - 2tsp vanilla extract - 265g self-raising flour - 335g light muscovado sugar - 2.5tsp ground cinnamon - 1/4tsp grated nutmeg - 265g grated carrots (about 3 medium carrots) - 100g chopped walnuts (+ more to sprinkle) - 100g soft butter - 300g icing sugar - 100g soft cream cheese - 1tsp vanilla extract method: 1. begin by prepping 2x 20cm cake tins by lining the bottom and greasing the sides with butter. 2. whisk together the oil, yogurt, eggs and vanilla until thoroughly combined. 3. (you can mix the dry ingredients seperately but I just put it all in together) - add in the flour, sugar, cinnamon, nutmeg, carrots and walnuts and mix with a large spoon until all combined and no lumps remain. 4. bake at 180c / 160fan for 30-35 minutes or until no cake is visible on a skewer when inserted. 5. leave to cool for 10 minutes before removing from the tin and leaving to cool completely (you can put in the fridge to speed this up). 6. meanwhile, whisk the butter, cream cheese and vanilla until combined and then add the icing sugar 1/2 cup at a time and whisk. (if you add it all at once, the sugar will go everywhere lol). 7. place one half of the cake upside down on a cake stand and spread half the mixture on top. 8. pop the other cake half on top and smear the rest of the frosting either just on top or all over like i did! 9. sprinkle with some more chopped walnuts however you like… enjoy queens xxxx🥕 #sweettreats #carrotcake #sweettreat #cakedecorating #cake
