that's the how not the why, the why is (I know you know this, and much more then myself, I'm just explaining it) because they want the power lower in the rpm curve for driveability, and since power is torque x rpm, if you don't want alot of rpm you need lot's of torque

Don’t being dual overhead cam have something do with less torque also. Won’t push rod motor make more torque than dual overhead cam motor.

The AMG engines I've seen inside of tend to have really small intake runners (not short, but small) which severely limits the airflow.
