One-Pot Chicken with Couscous I love making one-pot dishes—they’re so easy and versatile, especially when you’re cooking for a large family at a vacation home with limited cookware. This recipe was made in the oven using a deep baking sheet because that’s all I had, but you can easily make it in a large pot on the stove as well. For 4-6 servings, you will need: - 1 shallot, diced - 2-3 garlic cloves, minced - 3 tsp olive oil - 4-6 mixed chicken drumsticks and thighs - 2 medium eggplants, diced - 2 tomatoes, diced - 1.5 cups couscous - 2 cups water or broth - 1/2 cup wine or sherry vinegar - A mix of your favorite spices (I used sumac, paprika, dried parsley, dried oregano, salt, pepper, and coriander) 1. In a large bowl, marinate the chicken with the spices and wine. Set aside. 2. Chop and dice all the vegetables. 3. If using the oven, preheat it to 350°F (175°C). 4. In a large pan or baking sheet, add the shallot, garlic, and olive oil. Sauté for 3-4 minutes or until golden. 5. Add the eggplant and tomatoes. Lightly sprinkle with salt and mix well. Sauté for another 5-7 minutes. 6. Stir in the couscous and water or broth, mixing well. 7. Place the marinated chicken on top and pour the remaining wine from the bowl over the dish. 8. If cooking on the stove, cover and cook on low heat. Whether in the oven or on the stove, cook for 35 minutes. 9. Serve with fresh basil and enjoy!
