Remmick was controlling them that’s why they was so jolly and dancing it’s basically a hive mind type thing and once remmick died they had control over their own minds

Smoke was under the control of the alpha vampire, when the alpha died stack and Mary were free so they could behave as themselves, but previously not only was he in their memories but remember he had them all singing the same song that he was singing by himself at the very beginning of the movie, so he did have the ability to control them.
