Grilled Chicken and Corn Salad This salad is summer on a plate — smoky grilled chicken, sweet corn, crisp veggies, and a creamy tahini-lemon dressing. Perfect for picnics, light dinners, or meal prep. Start with the Chicken Brining the chicken is key — it keeps it juicy and flavorful. Ingredients (for 3 chicken breasts): * 1 gallon (about 4 liters) water * 2–3 tsp salt Instructions:
Mix water and salt well in a large bowl. Submerge the chicken breasts and refrigerate for a few hours or overnight. (I usually do this step right after I bring the chicken home.) To cook the chicken: 1. Drain and pat dry. 2. Add 2–3 tsp oil and sprinkle with: ½ tsp each of paprika, oregano, allspice, dried basil, and coriander. 3.
