Traditional hot pockets suck… It’s one of my favorite things to recreate traditional junk foods made with crappy ingredients by swapping them for quality ingredients and adding my own touch to it. Not only is it 10x better for you, it tastes 10x better as well. Here’s that recipe…⬇️ INGREDIENTS: 2 lbs @Good Ranchers chicken breasts 3 cups carrots 1 medium sweet onion 1 cup celery 1 bag frozen peas (I forgot to add these) 1 cup water 2 tsp garlic powder 1 tsp thyme 1 tbsp Italian seasoning 1 tbsp salt 1 tsp black pepper 2 tbsp butter 1/2 cup heavy cream 3 tbsp corn starch 1 tbsp flour PIE CRUST: 2.5 cups flour 8 tbsp chilled, cubed butter 1.5 sticks butter, softened 1 tsp salt 1/2 cup ice water Directions: 1.) Add water, veggies, chicken to a large pot. Cook over medium heat until chicken is cooked. 2.) Add in spices and seasonings and peas. Mix together, then add in your heavy cream with flour and corn starch mixed into it. Stir over medium heat until it’s all thickened. Remove from heat and set aside. 3.) Cut your butter into the flour until pea-sized bits form. Add in salt and water. Mix until  it comes together. Dump out onto counter and knead until you have a smooth ball. Divide into equal pieces. 4.) Roll dough into rectangles. Wet entire edge of rectangle. Fill with pie filling. Fold dough over and seal by pinching with a fork. 5.) Carefully lift up and place onto a cookie sheet with parchment paper. Bake at 400°F for about 30-40 minutes or until golden brown on top. 6.) Serve and enjoy immediately or freeze and enjoy later!
