5 things I’d do right away if I were diagnosed with celiac today—spoken as someone 13 years into this journey: 1️⃣ Focus only on eliminating gluten. I restricted dairy and corn early on, thinking I had to do everything at once. It was unnecessary, overwhelming, and over restrictive. Start with gluten—that’s the root issue. 2️⃣ Start a therapeutic dose of probiotics. Your gut needs support. I wish I had started probiotics sooner to help my digestion and rebuild a healthier microbiome. 3️⃣ Rest my digestive system.  My digestive system was damaged,  overworked, and poorly fed. I would have avoided eating hard-to-digest foods, ate only three meals a day, and drank soothing broths and juices right away so my gut could restore and repair.  4️⃣ Train my taste buds to love whole foods. I love veggies now—but it took time. Don’t just swap processed foods for GF versions. Add color, fiber, and life back to your plate. And learn how to roast, sautee, and season vegetables so you love em! 🩷  5️⃣ Give myself grace. Mistakes will happen. You’ll go to an event ill prepared and find there’s no food for you. You’ll mourn an easy-breezy life you once had. You’ll cry when your favorite dessert is now off limits. You’ll learn how to recreate foods and navigate this new life - it just takes time. Be kind to yourself—it’s a journey. 👋 What things would you do if you had to start from scratch?  I’m not a doctor.
